The menu is built around American-style specialty rolls like the VIP Roll and the Punk Rock Roll, with appetizers, hibachi and ramen alongside, and crawfish sourced from Cottonport. The full bar pours specialty cocktails, beer and wine, and the kitchen caters group gatherings and offsite events. The chain started in 2010 in a small space inside the Mobile Mall in Mobile, Alabama.
